Garam Masala (mixed warming spices)

Ingredients:

  • ½ cup black cardamom seeds
  • 4 - 6 cinnamon sticks (broken into small pieces)
  • ¼ cup whole cloves
  • ¼ cup black peppercorns
  • 1 tsp nutmeg powder
Instructions:
  1. In a small heavy bottomed frying pan roast all the ingredients one at a time on medium heat, stirring constantly until the spices are dry and crisp.
  2. Grind to a fine powder.
  3. Store in an airtight jar.

Notes:

  • You can keep Garam Masala in the refrigerator for between 6 to 12 months.
